Dario's carrot cake with olive oil
Alfonso’s nephew Dario from Sicily has baked this cake a few times with great success and our joy. Here is his recipe
For the dough:
300g finely grated carrots
80ml orange juice
grated peel of one orange
3 eggs
200g sugar of your choice
1/2 teaspoon of vanilla essence
260g plain four
100g almond flour
100ml extra virgin olive oil
16g baking powder
a pinch of salt
For the cream:
200g of soft cheese
20ml of olive oil
200g of butter
200ml of cream
a pinch of cinnamon
Cook the carrots with orange juice for 7 minutes, adding a pinch of salt. Turn of the heat and once the cooked carrots have cooled down, the mix in the orange zest.
In a separate bowl whisk eggs with sugar.
Add the olive oil and mix well.
slowly mix in the flour, almond flour and the baking powder, followed by the carrots.
bake for about 45 minutes gas mark 4.
In a bowl whisk the soft cheese with the olive oil and the cream until everything is combined.
cut the cake in half and if it has cooled off, spread the cream and put the top part of the cake back on.
Best to be enjoyed after it has rested for couple hours .
