Our EXTRA VIRGIN OLIVE OIL

Collana Verde oil is an award-winning single-estate, volcanic soil extra virgin olive oil. The oil is a blend of mainly four varieties of olives;

Cicinella Sessana, a light and fruity olive exclusively grown in the surrounding area, Itrana, originates from a close-by town (Itri) but it is now found in most Italian olive-growing regions because of its strong green tomatoes and herbaceous fragrance which gives the oil a robust yet a delicate and pleasing taste, Leccina, brings the distinctive artichoke flavour to the oil, Frantoiana, fruity and almond flavours and it also plays an important role in the eco system of the olive grove as the main pollinator.

The combination of these varieties of olives creates well-balanced oil, with a creamy texture. Artichokes, freshly cut grass, green tomatoes and the sweetness of almonds are the prevalent characteristics of Collana Verde olive oil.

Harvesting early in the season ensure that the oil is rich in polyphenols (antioxidants), full of nutritional values and is very low in acidity. The 2024 harvest acidity in Collana Verde olive oil is exceptionally low, 0.16% and with a healthy polyphenols count of 310.

Collana Verde Olive oil is not filtered.

I have been having San Marzano tomatoes simply with Collana Verde olive oil and salt and it tastes marvelous.
Similarly pasta with seasoning and the oil. Absolutely delicious. I will be buying more.
